[PW] Cruise ship cuisine

We have a patron who is trying to identify and ILL audiovisual
materials (DVD or VHS) geared for professional chefs (NOT for
amateur/home cooks) which focus on cruise ship cuisine. She wants
materials published as recently as possible ("definitely after the
1970's", would prefer 2000's) and "the most intricate and professional
available". English, French, or Italian languages are fine.
Using WorldCat, Amazon, Google, eBay, and the web sites of a dozen or
so culinary schools, I've been able to find videos about cruise ship
food, but none of those seem to be geared for professional chefs; and
videos geared for professional chefs, but none of those focus on
cruise ship cuisine.
Any pointers would be greatly appreciated.
