I asked some of the folks around here that worked in the naval stores
industry in this area and their answers were that it probably referred to
the cleared area in the pine plantation where the still and the storage
sheds for the barrels of raw resin from the trees and the finished
turpentine ready for shipping were all located.

Jeff;
There is a reference in a legal case from 1844 (I looked for references that
might have been current during Thoreau's lifetime) to a process of
cultivating pine trees for turpentine extraction.
Turpentine was extracted from standing trees, and this may have created such
work areas, or clearings, in the forest. However, I am just speculating, I
could not find a specific reference to the exact term that wasn't also
linked to Thoreau's writings.

Hope this helps shed some light!
