Here's a not-too-unlikely possibility.  One of the German words for
"sip" is "nippen", and there are German wine websites that talke about
"nippen" as what you do when wine-tasting -- slosh it around in your
mouth before swallowing.  Of course, "nip" in English is also a synonym
for "bite".  If the Austrian's command of English wasn't superb, he may
have thought that "nippen" could be expressed in English as either "nip"
or "bite".
