In the which case one is either preparing to melt Gryuere on top or to baste
with Rouille.
Or to spread Marmite or Patum Peperium.
Or Simply to fry in a little olive oil and add to soup.

I no longer know the technical name for what happens to ANY wheat flour
bread product that is refrigerated (as opposed to freezing), but the
chilling process very quickly "stales" the product. Which is why no baker
will ever advise putting bread in the refrigerator, unless one wishes to
get the bread stale. Connie
