[PW] The stirring of coffee with cinnamon sticks

Colleagues, my client is an avid fan of the Monk television series and she says that the detective's wife stirs her coffee with a cinnamon stick, a trick learned in Spain, to change its flavour.  The client would like more information on this practice, for example, do you throw the stick away, or carry it in a little case like a cigar, and how often do you replace the stick, and so forth.  We're an Australian library service and our collection on Spanish food is, well, far weaker than that I assume American libraries are, because of the links between Hispanic and Spanish cookery, so I was hoping one of you could point me to a good site or book with information on this practice.
