Bruce,
I found him! Dr. Asaf Atchildi.  He described his experiences in an article 
printed in the journal _Yad Vashem Studies_.  I don't expect you'll find him 
among the Righteous Gentiles because he was, himself, a Jew.  I'll search 
some more tomorrow, but meanwhile, here is the citation:

Atchildi, Asaf. (1967) "Resuce of Jews of Bukharan, Iranian and Afghan 
Origin in Occupied France (1940-1944)" in _Yad Vashem Studies on the
