I've trawled the usual suspects, and can't find any reference to the poem. Maybe it is original?
Anyway, as an aside...
I'm trying to figure out what the line preceeding "X is for blank..." would be.
Surely, it has to be
"W is for Wombat - they answer tough reference enquiries
X is for [blank]--no mammals that begin with this letter you see
Any advances?

Hi Wombats,
I'm starting here because I'm not subscribed to any kidlit lists; feel free to
pass on if any of you are.
We do a picture book contest for kids, and naturally have to deal with
plagiarism issues once in a while. We have an entry entitled "Mammals A to Z" by
which seems suspiciously advanced for a 7-year-old. (The illustrations are
clearly original and adorable; it's the text we are worried about). Some of the
couplets/animals also ring a faint bell. I can't find any matching book in our
collection or by searching the usual places.
Below are some representative letters. Does this seem familiar to anyone else?

B is for bat that hangs upside down

M is for mouse that likes to eat cheese
N is for narwhal that lives in the seas

Q is for quagga, no longer around
...
