For what it's worth....... the 1897 Sears & Roebuck Catalog sold pork
products in barrels -- 160 lbs. for a full barrel, the illustration
shows a traditional wooden barrel. "From Chicago's best packing
houses, guaranteed fresh and sweet upon shipping." No mention of how
it might arrive if the freight car got shifted onto a siding and sat
there a while.
