Another slant: When preparing a goose for the oven, many people prick the
skin all over with a fork, to let the grease out during the roasting
process. Goose meat is very fat, and most people prefer not to have to eat
all of it.
Could "getting the grease from the goose" mean eliminating a less desirable
factor from something that is otherwise very good?
I've never seen the term before, so I'm just guessing.
