I've not seen this, but couldn't you just make, well, something like an apple rhubarb pie, but with plums instead, and just not sweeten it? 

The recipie below has a tiny amount of sugar compared to some others, but has quite a bit of jam.

  I just bought a house with a plum tree laden with ripe fruit.  My husband keeps talking about a pie his mother used to make.  It had a single pastry crust, and was unsweetened.  The family would spoon sugar on the individual slices.  My mother-in-law was a native New Yorker, and she would have made the pie in the 50s and 60s.
