A wine expert of my acquaintance sends this response:
"encépage" or perhaps, "encépagement."
Colloquially, encépages = the mix of different grape varieties that are
blended to make a particular wine (red, white or rosé). When sommeliers
or wine makers are making chit chat you often hear them talking about
the make up of a specific wine, made from one or more grape varieties,
as the "encépage."
However, at least in France, the word "encépagement" is more correctly
applied not to the varietal composition of a wine, but rather to the
proportions of different vine varieties planted in a vineyard.
