 Jack Zipes and Jane Yolen have created some bug-crushing volumes for more mature readers, and I'd trust any young readers' volumes particularly from Yolen, a notable writer for beginning and young readers as well.
My own first reader of Grimms' was an I Can Read It Volume from midcentury, GRIMM'S FAIRY TALES TO READ ALOUD:
