That is actually a misquote. The real thing from Thoreau"s journal, 5 August 1851 is: “The question is not what you look at, but what you see.”

Is this close enough?:

"It´s not what you look at that matters, it´s what you see." - Thoreau

If not, you might substitute "reality" for "everything" and browse sites like brainyquote and 
quotegarden.  Many, especially scientists, have expressed the idea that reality just is, 
whether or not you see it or believe it.  OTOH, many scientists and philosophers have 
expressed the idea that reality is an illusion.
